National Fancy Rat Society - information on rat care. Has a very good forum that you must be a member of the NFRS to join.
London and Southern Counties Mouse and Rat Club - holds regular shows in the London area.
Fancy Rats - some information on rat care, plus a lively and busy forum.

NFRS Varieties - includes some photos and the NFRS standards descriptions.
Hawthorn Varieties - photos and descriptions of rat varieties.
Ratz.co.uk - a definitive website, mostly written by Estelle Sandford, containing most of the answers for anything you need or want to know about rats, including care, feeding, housing and health.
Shunamite Rats - articles and information from another established breeder, Alison Campbell, similar to the above Ratz site. Lots of information about diet and healthcare.
Rat Behaviour & Biology - interesting website, well worth a read if you're interested in why rats act the way they do.

Shops:

Fuzzbutt - handmade hammocks of very high quality. Usually I make my own or buy wholesale, but the rats get these for Christmas!
The Rat Warehouse - lots of stuff for small furries.
